I’ve been eating a lot of tuna salad lately, especially because Max likes it too, so we just always have the ingredients for it at our place. It’s good & filling & not bad for you either; although, consuming too much tuna can be & a lot of mayo isn’t the best for the waistline. When I saw TIU’s recipe for a chickpea salad I was delighted. This really switches up tuna salad & I don’t have to consume so much tuna anymore & it still is filled with protein.
I still use the same ingredients I did before (sorry TIU) I just swap out the tuna for chickpeas instead! So delicious, I’m glad I saw this idea & can still stay on track with the Bikini Series with a few different modifications. So here’s my recipe for my Chickpea Salad:
- 1 tbs vegan mayo/mayo
- 1 cup chickpeas
- Pepper
- Crushed red pepper flakes
- Salt (optional, I don’t like salt)
- Turmeric (I add this to almost everything)
- 1/4 avocado
- 2 slices Ezekiel bread
