Let’s talk about my easiest & fastest meal prep tip EVER!
Lately I have been eating like garbage! The weather has been up & down so I haven’t been leaving to do workout. It’s dark in the morning or rainy so I usually get on my bike when I get home from work & watch YouTube videos!
With that being said…I have been sleeping in & not making my lunch in the morning or making breakfast! Breakfast is my favorite meal of the day & I hate missing it. I do, however, have oatmeal that I heat up at work when I sleep past my alarm. For lunch though, I just order out…I know horrible so I came up with the best meal prep hack ever.
I think you should be able to treat yourself a couple nights a week, whether it’s with a couple glasses of wine, take out or a dinner out. Max & I love ordering take out Chinese food once a week.
Here comes the meal prep hack!
Every time you order a meal you get a pint of rice! Well, we can barely finish our meals to begin with so the extra side of rice goes right into the fridge. BOOM! Instant left overs. I use this as a base for pretty much anything twice that week. Max loves stir fries so I use the rice mixed with chicken, & mixed veggies (I always order steamed veggies).
Today I used 1/4 cup of the rice with 1/2 cup black beans & 1/2 cup corn, topped with chopped beets for lunch! So fast to meal prep, too. All I did was split up a can of corn, a can of black beans and the container of white rice & I still have leftover rice for dinner one night! I put all three “ingredients” into containers & mixed with taco seasoning. After I heated it up in the microwave I topped it with chopped up beets & Bon Appetit!
Last night Max & I ordered A LOT of Chinese food, so we have dinners for the rest of the week. Which is going to make life a lot easier.
Moral of the story…ALWAYS order extra & hide them right away! Try to order extra healthy options, though. This way when you’re meal prepping you only have healthy options to choose from. Besides, you just had a treat so it’s good to balance it out with a healthy meal/meals!
