My bread journey started on February 27th 2023 and as of yesterday June 13th 2023 I am officially a baker. I made two loafs of sourdough bread and hopefully can keep this up.
I started with a starter and then another and then another…you get the picture. So finally as of three or four weeks ago I had a solid starter but the bread was still coming out doughy. Turns out I wasn’t baking it long enough, obviously. So once I was able to get the starter started and got the timing down all I had left was to make the perfect loaf of bread and I made TWO. Just to make sure it wasn’t a one time miracle LOL
The recipe I used for the starter was from my cousin Alison which used a scale but my battery died so I switched to measuring cups. The recipe is as follows:
- 1/2 cup flour
- 1/4 cup water
Yeah, that’s it. That is literally all it takes to make a starter. How did I kill mine time and time again you ask. Well, once you start this journey you’ll see but here are my mistakes: too much water, using metal (this messes it up, I guess), not mixing well enough or skipping a day or two. Supposedly after 7 days you can successfully make a loaf of bread but mine took about two weeks to really get going so don’t be discouraged.
Also, note your starter is supposed to double in size so you have to keep discarding enough to make room for more ingredients and growth.
So now you have your live starter. I used this recipe to make my beautiful loafs of bread and honestly they taste good too!
Moral of the story, even if the recipe says 7 days it could take you over three months to make a perfect loaf of bread.
