Easy peasy dinners I make all of the time without meat! Of course you can add your own meat (that’s what I do for Max) to these recipes, I just don’t eat it!
This is one of those snack or dinner recipes!
Stuffed Peppers!
- 1 cup quinoa
- 1 cup black beans
- 1/4 cup chopped onions
- 1/2 cup green peppers
- 4 veggie burgers
- 1/2 tbs chili powder
- 1/2 tsp black peper
- 2 tbs olive oil
- 4 bell peppers
- Nutritional yeast
- Mexican cheese (if desired)
Cut tops off of large bell peppers, rinse & set aside to dry. Boil water & cook quinoa, drain & sit aside. Heat up olive oil in a fry pan with onions ’til fully cooked. Add quinoa, mashed veggie burgers & spices. Mix together well. Add black beans (& cheese) & mix again. Turn off stove & scoop mixture into large bell peppers. Top with nutritional yeast. Wrap in foil and bake at 350° for 20 minutes in oven or ’til fully cooked. Let cool a bit & enjoy!
Max & I made this when we first started dating & were obsessed! It takes a bit of time but with a partner & a glass of wine you’ll be eating in no time!
Burrito Bowl w/Cauliflower Rice!
- 1 cup cauliflower rice
- 12 pieces “chicken”
- 1/2 cup corn (drain)
- 1/2 black beans (drain)
- 1/2 avocado
- 2 tbs salsa
Get a large frying pan & heat up with 2 tbs of olive oil. Add cauliflower rice & “chicken” to frying pan & mix ’til “chicken” is warm. Add corn & black beans & mix ’til everything is warm. Turn off stove. Scoop into bowl & add salsa. Top with avocado & enjoy!
Stir-Fry!
- Zuccini noodles (zoodles)
- Snap peas
- 10 Shrimp
- Peppers (1 large bell pepper cut up)
Get a large frying pan & heat up with 2 tbs of olive oil. Add the shrimp & cook til pink! In another frying pan add 2 tbs olive oil & mix everything else. Once the zoodles are soft turn off stove & add the shrimp. Let cool & enjoy!
Pizza!
- pre-made dough
- 2 tbs sauce
- Cheese (you do you here)
- 1 handful black olives
- 1 handful pepperoni or
- Toppings of Choice
Roll out the dough. Add sauce evenly. Sprinkle cheese sparingly or load it up! Add your toppings of choice, Max puts pepperoni on half the pizza for him & black olives on half the pizza for me! I have a pizzapizaz which makes cooking pizza super easy, however, the days before my favorite kitchen appliance I would set the oven at 350 for about 20 minutes or ’til crust was a crisp golden color & enjoy!
This is actually my favorite recipe because…Max makes it, so I just drink wine & watch Impractical Jokers while he does all the work, then I get served pizza! He’s a dream come true!
