I eat a pescatarian diet but I try to eat vegetarian for the majority of my diet, but at the most, one meal a day contains fish. Breakfast & lunch are mainly vegetarian because it’s super easy & I don’t need to worry about cooking anything in the oven, especially at work. Here are some quick & easy vegetarian meals for anyone to try!
My favorite lately have been these “Special Blends” from Wegmans, I just divide them up into three separate containers, 1 cup each & add 1/2 cup of beans.
This on I mix with Chickpeas & I never make potatoes so I love that it’s already prepped & just needs to be heated up!
This one I mix with black beans & just started adding dried cranberries to sides like this or brussels sprouts!
Speaking of brussels sprouts, I’ve been making brussels sprouts with fake beef! Take about 9 brussels sprouts, cut in halves the long way, season with garlic & olive oil. Let bake at 350 degrees for about 20 minutes or until crispy. Cook fake beef however the package tells you to, I use morning star or Wegmans brand. Mix together with brussels sprouts & at dried cranberries!
They’re all so good & without beans or fake meat can be used as sides to any entree!
