Who else hates turning on the oven in the summer heat?? Me too! Who else doesn’t want to order take out for every meal?? Yeah, me too! Here are some summer dinner recipes to beat the heat!
Zoodles & Protein!
This one you’ll need the stove-top but only for one minute. Literally, one minute to heat up the zoodles!
- 1 cup zoodles
- 2 tbs olive oil
- or
- 1/2 cup red sauce
- 1 tbs garlic powder
- 6 oz. protein (depending on your protein of choice you may need to turn the stove back on or grill)
Cook zoodles in fry pan with oil of choice. Add to bowl or plate & mix with 2 tbs olive oil & garlic powder. If using red sauce do not use garlic powder. Add protein & enjoy!
Quinoa salad!
This one you’ll need to cook to quinoa
- 1 cup quinoa
- 1/2 cut cucumber
- 1/2 cup shredded carrots
- 1/2 cup chic-peas
- 1/2 cup diced baby tomatoes
- Olive oil
- Pepper
Boil water & cook quinoa, drain & sit aside to cool. Mix all together with a little olive oil & pepper or any other spices of your choice & enjoy!
Any Salad!
- Any lettuce beside ice burg
- Any veggies load ’em up!
- Any dried fruits!
- Any protein (to keep it cool try chic-peas or canned tuna)
- Light dressing of choice or make your own!
Mix & enjoy!
Tuna Salad!
- 1 can tuna
- 2 tbs (vegan) mayo
- Chopped up celery (handful)
- Black olives (handful)
Wrap it Up!
- Lettuce leaves/wrap
- Choice of protein (option: tuna salad)
- 2 tbs hummus
- veggies of choice
- 2 tbs salad dressing
Bonus Meal!
- Sushi!
Okay…I don’t have a recipe for this one & it may be a take-out, unless anyone has a good recipe for this? BUUUT it’s such a quick & cool summer meal! & if it’s a chilly night order some miso soup, too!
