I know last Friday I did my Go-to Food list but that was before I spent two weeks straight making the same dinner every night for myself & Max! So I have officially added #11 to the list…
Stir Fry!
Yes, stir-fry (¬ the song…aha) if you noticed a lot of my go-to foods were super easy & accessible…well; stir fry is definitely in that category. All you have to do is mix everything together in one pan & you’re good to go. I’ve made a different stir-fry every night for the past two weeks & I’m still not sick of it & have plenty more combinations to try. I even make them for Max with meat & he loves them!
We always have so many leftovers that we just end up throwing out but by making stir fries I haven’t wasted anything in our fridge & that my friends is the biggest reason why I LOVE stir fries!
If my short ramble has you convinced read along for my tips to making the perfect Stir Fry:
1. Heat it up. Before adding anything to the pan let the oil get warm. I use olive oil but you can use any cooking oil, sometimes I use coconut oil! Leave the stove on low through the whole frying process, this way you can keep adding all your ingredients until you’re done!
2. Start with a base. I use cauliflower rice or regular rice for Max (we had Chinese food one night & I didn’t want to waste the rice that no one ever eats…) I did add ½ cup to mine each time because your girl loves rice!
3. Add your protein. The first night I had left over beans from lunch in mine. The second night I had fake ground beef & so on… For Max I use ground beef (the real stuff). I also, add an egg every once & a while!
4. Load up on veggies. I add so many veggies to our stir fry…carrots, broccoli, onions, peppers, beets, etc…
5. Add butter. If you like the taste of butter. I use vegan butter & Max can’t tell it’s not the real thing, so I haven’t told him! It gives the veggies an extra kick of flavor.
6. Spice it up. I add all different types of spices so you have all the freedom in the world with this step!
7. Top it off. I LOVE topping my stir fry off with salsa but for Max I just add lettuce or leave it plain. Your stir-fry your choice! Sunday Max made vegan Mac & Cheese, so I used left over cheese & mixed it in with our stir-fries Monday night! Yumm!
See how easy it is to make! You really have the freedom to make it however you want. You can sub anything you want out for your own favorites. If you’d rather use quinoa as a base go for it! Brussel sprouts instead of broccoli…you name it, it’s your creation!
